Ingredients:

4-6 chicken pieces (drumsticks, thighs, breasts)
2 cups buttermilk

2 cups all-purpose flour
1 tsp baking powder
1 tbsp paprika
1 tbsp garlic powder
1 tbsp onion powder
1 tsp cayenne pepper (optional)

For Frying:
Vegetable oil (for deep frying)
Instructions:
Marinate the Chicken:
In a large bowl, mix buttermilk, hot sauce, salt, and pepper.
Add the chicken, ensuring it’s fully submerged.
Cover and refrigerate for at least 4 hours or overnight for maximum flavor.
Prepare the Coating:
In another bowl, combine flour, baking powder, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
Coat the Chicken:
Remove the chicken from the marinade, letting excess buttermilk drip off.
Dredge each piece in the flour mixture, pressing gently to ensure an even coat.
Place on a wire rack and let rest for 15-20 minutes for the coating to set.
Fry the Chicken:
Heat oil in a deep fryer or heavy-bottomed pot to 350°F (175°C).
Fry chicken in batches, careful not to overcrowd the pan, for 12-15 minutes or until golden brown and the internal temperature reaches 165°F (75°C).
Transfer to a wire rack or paper towel-lined plate to drain excess oil.
