Ingredients:

For the Marinade:

  • 4-6 chicken pieces (drumsticks, thighs, breasts)

  • 2 cups buttermilk

  • 1 tbsp hot sauce (optional for extra spice)

  • 1 tsp black pepper

For the Coating:

  • 2 cups all-purpose flour

  • 1 tsp baking powder

  • 1 tbsp paprika

  • 1 tbsp garlic powder

  • 1 tbsp onion powder

  • 1 tsp cayenne pepper (optional)

  • 1 tsp salt

  • 1 tsp black pepper

For Frying:

  • Vegetable oil (for deep frying)


Instructions:

  1. Marinate the Chicken:

    • In a large bowl, mix buttermilk, hot sauce, salt, and pepper.

    • Add the chicken, ensuring it’s fully submerged.

    • Cover and refrigerate for at least 4 hours or overnight for maximum flavor.

  2. Prepare the Coating:

    • In another bowl, combine flour, baking powder, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.

  3. Coat the Chicken:

    • Remove the chicken from the marinade, letting excess buttermilk drip off.

    • Dredge each piece in the flour mixture, pressing gently to ensure an even coat.

    • Place on a wire rack and let rest for 15-20 minutes for the coating to set.

  4. Fry the Chicken:

    • Heat oil in a deep fryer or heavy-bottomed pot to 350°F (175°C).

    • Fry chicken in batches, careful not to overcrowd the pan, for 12-15 minutes or until golden brown and the internal temperature reaches 165°F (75°C).

    • Transfer to a wire rack or paper towel-lined plate to drain excess oil.

  5. Serve:
