🥗 Creamy Mixed Vegetable Salad Recipe

🧾 Ingredients:

  • Boiled Potatoes – 1 cup (cubed or roughly mashed)

  • Carrots – ½ cup (finely chopped)

  • Cucumber – ½ cup (diced)

  • Corn Kernels – ½ cup (boiled or steamed)

  • Capsicum (Bell Pepper) – ½ cup (chopped)

  • Onions – ¼ cup (finely chopped)

  • Fresh Coriander – for garnish

  • Salt – to taste

  • Black Pepper – ½ tsp

  • Chaat Masala – ½ tsp (optional)

  • Lemon Juice – 1 tbsp (optional)

  • Mayonnaise or Yogurt-based Dressing – 3–4 tbsp (drizzle on top)


👩‍🍳 Instructions:

  1. Prep the vegetables:

    • Boil the potatoes and allow them to cool before cutting or mashing slightly.

    • Finely chop the carrots, cucumber, capsicum, and onions.

    • Boil the corn if using fresh kernels.

  2. Combine in a bowl:

    • In a large mixing bowl, arrange all the vegetables neatly as shown in the image (for presentation), or mix them all together.

  3. Season:

    • Sprinkle salt, black pepper, and chaat masala over the salad.

    • Add lemon juice for a fresh zing (optional).

  4. Add dressing:

    • Drizzle mayonnaise or yogurt dressing over the top. You can use plain Greek yogurt mixed with a pinch of salt, pepper, and a few drops of lemon juice as a healthier alternative to mayo.

  5. Mix & Garnish:

    • Gently mix all ingredients until well combined.

    • Garnish with chopped coriander.


🍽️ Serving Suggestion:

Serve chilled as a side dish, evening snack, or a healthy meal on its own!
