🥗 Creamy Mixed Vegetable Salad Recipe
🧾 Ingredients:
Boiled Potatoes – 1 cup (cubed or roughly mashed)
Carrots – ½ cup (finely chopped)
Cucumber – ½ cup (diced)
Corn Kernels – ½ cup (boiled or steamed)
Capsicum (Bell Pepper) – ½ cup (chopped)
Onions – ¼ cup (finely chopped)
Fresh Coriander – for garnish
Salt – to taste
Black Pepper – ½ tsp
Chaat Masala – ½ tsp (optional)
Lemon Juice – 1 tbsp (optional)
Mayonnaise or Yogurt-based Dressing – 3–4 tbsp (drizzle on top)
👩🍳 Instructions:
Prep the vegetables:
Boil the potatoes and allow them to cool before cutting or mashing slightly.
Finely chop the carrots, cucumber, capsicum, and onions.
Boil the corn if using fresh kernels.
Combine in a bowl:
In a large mixing bowl, arrange all the vegetables neatly as shown in the image (for presentation), or mix them all together.
Season:
Sprinkle salt, black pepper, and chaat masala over the salad.
Add lemon juice for a fresh zing (optional).
Add dressing:
Drizzle mayonnaise or yogurt dressing over the top. You can use plain Greek yogurt mixed with a pinch of salt, pepper, and a few drops of lemon juice as a healthier alternative to mayo.
Mix & Garnish:
Gently mix all ingredients until well combined.
Garnish with chopped coriander.
